- 1 pkg. extra firm tofu (drained and cubed)
- 1/2 cup cornstarch
- 2/3 cup buffalo sauce (divided, I like franks buffalo sauce)
- 1 cup cooking oil (such as vegetable)
- 3 romaine (hearts, or 8 cups of chopped romaine, chopped and divided in half)
- 3 celery stalks (diced and divided in half)
- 2 plum tomatoes (diced and divided in half)
- 2 handfuls corn tortilla chips (white, crumbled, use your hands! and divided in half)
- 1/2 cup ranch dressing (I like to make my own using the hidden valley packets)
- 1/2 cup cheese crumbles (bleu)
