- 6 tsp. chipotle sauce (Tabasco, widely available, depending on how hot you like things)
- olive oil (for drizzling and oiling)
- 100 grams unsalted butter
- 4 tsp. cider vinegar
- 2 tsp. Dijon mustard
- 2 tsp. worcestershire sauce
- 1 Tbsp. sweet chilli sauce (â not Thai â such as Linghamâs, widely available)
- 2 Tbsp. tomato ketchup
- 2 celery hearts (small, each cut lengthways into chunky wedges)
- 4 little gem lettuce (hearts,quartered lengthways, to serve)
- 75 grams blue cheese (devon)
- 4 Tbsp. mayonnaise (good-quality)
- 1 garlic clove (small, crushed)
- 5 1/2 tsp. lemon juice
- 4 Tbsp. soured cream
- 1 banana shallot (finely chopped)
- 1 Tbsp. fresh parsley (chopped)
- 1 Tbsp. whole milk (optional)
