Description
For when you're craving spicy wings but want to keep dinner on the lighter side, these buffalo chicken stuffed peppers are sure to satisfy. The recipe is a Yummly original created by Sara Mellas.
Ingredients

- 4 bell pepper (large)
- 12 oz. rotisserie chicken (shredded)
- 1 celery stalks (finely minced)
- 2 scallions (minced)
- 1 tsp. garlic powder
- 1/2 cup Buffalo style hot sauce
- 1/3 cup shredded mild cheddar cheese
- nonstick cooking spray
- 3 Tbsp. crumbled blue cheese

Directions
- Preheat the oven to 375°F.
- Slice the tops from the bell peppers, remove the stems, and set aside. Remove the internal seeds and membranes. Arrange the peppers open side up in a glass baking dish.
- Place the shredded chicken, minced celery, half the minced scallions, garlic powder, and hot sauce in a mixing bowl. Mix with a rubber spatula to combine.

Not bad. I used feta instead of blue cheese. It’s really liquidy, I think it would benefit from cream cheese, make the filling for like buffalo dip.
