- 1 yellow onion (chopped)
- 1/2 cup celery (chopped)
- 1 cup carrots (peeled and chopped)
- 4 cloves garlic (minced)
- 2 cups chicken (cooked and shredded, I used rotisserie chicken)
- 4 cups chicken broth
- 1 can diced tomatoes (DON’T drain them)
- 2 cans Great Northern beans (drained and rinsed)
- 3/4 cup buffalo sauce (I’d start with 1/2 cup then add more after tasting if desired)

- crumbled blue cheese (optional)
- ranch (optional)
- chopped green onion (optional)
- chopped cilantro (optional)
- avocado (optional)
- chopped celery (optional)
