- 1 head broccoli (cut into bite-sized florets)
- 12 oz. chicken sausage (al fresco all natural Buffalo, 1 package)
- 2 Tbsp. olive oil
- 1 small onion (finely diced)
- 3 garlic cloves (minced)
- 8 oz. shredded cheddar cheese (I used 50% reduced fat cheddar)
- 4 oz. American cheese (get this from the deli department do not use slices)
- 2 oz. blue cheese (plus more for garnish if desired)
- 10 oz. milk
- 2 tsp. cornstarch
- 1 Tbsp. buffalo sauce (if desired, optional)
- 1/4 tsp. pepper
- 3 green onions (chopped for garnish, optional)
