- 1 head cauliflower (or 2 small, cut into small bites)
- 1/4 cup buffalo wing sauce (see recipe here)
- 6 oz. mascarpone cheese (softened, or cream cheese)
- 2 cups shredded cheddar cheese
- 2 Tbsp. grass-fed butter
- 1/2 cup heavy cream
- 1/4 cup blue cheese dressing (low carb, I use Marzetti’s Simply Dressed)

- 1/4 cup buffalo wing sauce (see my homemade sauce link in the recipe)
- 6 oz. mascarpone cheese (softened, or cream cheese)
- 2 cups shredded cheddar cheese
- 2 Tbsp. grass-fed butter
- 1/2 cup heavy cream
- 1/4 cup blue cheese dressing (low carb, I use Marzetti’s Simply Dressed)
- 1/4 cup blue cheese crumbles (for the top)
