The sweet potato was delicious...I made an avocado sauce for the greens, and the greens were delicious...I just don’t know if I made the sun dried tomato dressing wrong?? It blended into a lumpy oily liquid with a really strong vinegar taste. I had to strain out a lot of the water for it to be an edible consistency. Other than that all was yummy and I’d make it again—just tweak it a bit :)
