Description
Requiring just 7 simple ingredients, these Buckwheat Cookies are great cookie to whip up when you have guests coming over. Made with a combination of buckwheat and regular flour, these cookies are sweetened with raw sugar for a healthier cookie option to add to your repertoire. Prepare the dough and let chill for at least one hour in the refrigerator before shaping and baking. Sprinkle the cookies with raw sugar before baking for a sweet and crunchy flair.

- 200 grams buckwheat flour
- 100 grams flour
- 125 grams salted butter
- 120 grams raw sugar
- 1 egg
- 1/2 tsp. baking powder
- raw sugar (for sprinkling)

Directions
- Beat the butter with the sugar, then add the egg and next, add the two types of flour sifted with the baking powder.
- Knead quickly, then shape the dough into a ball, cover it in plastic wrap and refrigerate it for at least one hour.
- Roll out the dough with a rolling pin, sprinkle it with the raw sugar and then roll the rolling pin over the dough for the sugar to adhere well to the sheet of dough.

I made these but they were so crumbly I could not roll them out. I ended up adding more butter but even then I had to press the dough in to the cookie cutter to get it to hold together and keep its form. Once I figured that out, the cookies were amazing!!!!
I will def be making these again even if i have to use this "sideways" method.
I'd love to know what I did wrong. I'm an avid baker, but this is my first time using buckwheat for making cookies.
