I loved how these turned out. i toasted buckwheat groats then soaked them overnight in almond milk and raw cashews (because I didn't have any coconut milk or blanched almonds). i added the rest of the ingredients in the morning. i like a thin pancake so i added more almond milk and coconut cream to get the consistency very thin. They cooked up nicely and were very nutty and tasty.
