- 6 slices thick sliced bacon (cut into 1/4-inch-wide strips)
- 1/2 cup shallots (finely chopped)
- 4 garlic cloves (crushed and peeled, plus 1 tablespoon grated garlic, use a Microplane or garlic mashed to a paste)
