- 1 tsp. ponzu (or umeboshi, plum vinegar or rice wine vinegar)

- 1/2 tsp. salt
- 1/2 lb. brussels sprouts (about 10, washed)
- 8 oz. soba noodles
- 1 Tbsp. white sesame seeds (or black, as garnish, optional)
- 1 green onion (sliced, as garnish, optional)
- 1 avocado (sliced, as garnish, optional)
