- 2 Tbsp. sesame oil
- 2 cloves garlic
- 1 tsp. fresh ginger (grated or minced)
- 1 lb. Brussels sprouts (stems removed and thinly sliced)
- 1 carrot (large, chopped into matchsticks)
- 1 red pepper (sliced)
- 2 Tbsp. soy sauce
- 1 lime (juiced)
- 1/2 tsp. curry powder (I like to use spicy yellow curry powder)
- 1/2 tsp. pepper
- 1/2 grapefruit
- 4 green onions (chopped)
- 1/2 bunch fresh cilantro (or basil)
- 1 1/2 cups vermicelli noodles (cooked)
- 2 avocado (1- ,large, 's, sliced thin)
- 1 pkg. rice paper wrappers (you will not use them all, but I like to have extra wrappers incase I mess up a few)
- 1/2 cup hoisin
- 1/2 cup grapefruit juice (freshly squeezed, about half a large grapefruit)
- 2 Tbsp. creamy peanut butter (or can sub almond butter)
- 2 Tbsp. chili sauce (sweet thai)
- 2 Tbsp. soy sauce
- 1/2 tsp. crushed red pepper flakes
- 1/2 grapefruit (zest of ,or more to your liking)

The dipping sauce is really good, next time wont simmer as long, just till its mixed throughout. It gets really thick if you let it reduce like the recipe calls for. The flavor combination for this is a bit off for me, going to try again but without the curry powder next time... then I think it will be better. Loved how fresh it tasted before I put the curry powder in, plus i think the curry powder and grapefruit taste weird together. Probably just my weirdness!!
