- 4 boneless skinless chicken breasts (5 to 6 ounces each)
- 1/4 cup Mazola Corn Oil
- 2 Tbsp. balsamic vinegar
- 2 garlic cloves (finely minced)
- 1 Tbsp. Spice Islands Italian Herb Seasoning
- 1/2 tsp. Spice Islands Fine Grind Sea Salt
- 1/4 tsp. Spice Islands Fine Grind Black Pepper
- 2 cups plum tomatoes (diced)
- 1/4 cup diced red onion
- 1/2 cup italian blend cheese (shredded)
- 1/4 cup fresh basil (finely chopped)

Directions
- Place chicken breasts in a large resealable plastic freezer bag, one at a time.
- Lightly pound chicken breasts to an even thickness of about 3/4-inch.
- Combine oil, balsamic vinegar, garlic, Italian herb seasoning, salt and pepper in a small bowl and whisk until combined.
