Description
Hearty, satisfying Brunswick stew, a favorite one-pot meal in the South, often simmers for hours. This weeknight version clocks in at only 45 minutes, thanks to a few smart shortcuts. Rotisserie chicken, pulled pork from the grocery store or a takeout restaurant, frozen veggies, and bottled barbecue sauce help get you to the finish line in short order. The stew makes a lot (14 cups), but leftovers taste even better the next day and freeze well, too. The recipe is a Yummly original created by Ashley Strickland Freeman.
Ingredients
- 1 small onion (1 1/2 cups)
- 2 cloves garlic
- 2 Yukon Gold potatoes (14 oz.)
- 2 Tbsp. vegetable oil
- 1 tsp. kosher salt
- 1/2 tsp. black pepper
- 12 oz. frozen lima beans
- 12 oz. frozen corn
- 32 oz. chicken broth
- 28 oz. diced tomatoes (1 large can, undrained)
- 1 cup barbecue sauce (hickory and brown sugar, or smoky mesquite, or another favorite barbecue sauce)
- 2 tsp. apple cider vinegar
- 1 lb. pulled pork (from a grocery store or barbecue restaurant)
- 2 cups shredded rotisserie chicken (skinned)
- chopped fresh parsley
Directions
- Dice onion and mince garlic. Peel and cut potatoes into 1-inch pieces.
- Heat oil in a Dutch oven over medium-high heat. Add onion and garlic. Sprinkle with salt and pepper and cook, stirring often, until onion is tender, about 5 minutes.
- Add potatoes, lima beans, corn, chicken broth, tomatoes, barbecue sauce, and vinegar and bring to a boil.
- Stir in pulled pork and chicken. Reduce heat and simmer uncovered until potatoes and lima beans are tender, about 15 minutes.
- Ladle stew into bowls and sprinkle with parsley.
