Very yummy! My honey and I have down sized just recently from a 2 bedroom to an RV so not only have we had to learn how to live without choking each other out in a smaller space but I have to learn how to cook a lil differently.so I made some modifications that were a bit more convection microwave friendly.
So , since we didn't have any apricot preserves I used peach instead and a much smaller ham.

My dry mustard seemed to have also been a casualty so I used some Beaver Sweet hot mustard with about 2-3 drops yellow added
I used a capful of pure vanilla extract
1/4 cup Dark brown sugar
Pinch of Info European ground ginger powder to taste
3/4 tsp water
Then once ham was glazed I combo 2 cooked it for a half hour then added
3/4 lb mini red potatoes halved
1/4 cup thinly diced a Walla Walla sweet onion
Pinch of salt to taste
Cooked another 20min till potatoes were done.
The rest was yummy goodness history with a happily passed out hubby who slipped blissfully into a food coma. While I savoured not only another tasty challenge but the peace and quiet as well.
Next time I will be prepared and have the apricot preserves on standby and my dry mustard on hand!!
