  • 2 1/2 ounces dark brown sugar
  • 2 1/2 ounces granulated sugar
  • 1 teaspoon cocoa powder (Black Onlyx, or some other very dark "Oreo-style" cocoa powder or espresso powder)
  • 1/2 teaspoon vanilla paste
  • 1/2 teaspoon kosher salt
  • 1 large egg
  • 5 ounces bread flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 4 ounces toffee bar (chopped milk chocolate)
  • 2 ounces chocolate chips (60% cacao)
  • flaky sea salt (a bit of coarse, for sprinkling--whatever kind you like. I used Piment d'Espelette Grey Sea Salt, and it was divine.)
