Searching for brunch inspiration? Look no further than this recipe for Broccoli, Salmon, and Manchego Quiche. Made with steamed broccoli florets, slices of smoked salmon, and shredded Manchego cheese this quiche has a flaky crust and a creamy filling. You can make your own pie dough or purchase a premade pie dough. You do need to blind bake the crust before adding the filling to make sure that you do not end up with a soggy bottom. Bake time is 30 minutes.

- 100 grams broccoli
- 3 eggs
- salt
- 50 mL whipping cream
- 3 slices smoked salmon
- 50 grams manchego cheese (shredded)

Directions
- Preheat the oven to 180 degrees Celsius.
- Butter and flour a pie pan. Roll the dough into a round with a rolling pin and place into the pie pan, trimming any extra dough. Bake for 10 minutes.
- To prepare the filling, cut the broccoli into pieces and steam until cooked.
