This salad really hits the spot - and it’s so fast and simple to make! I added a bit more garlic because I love it with the flavor of the arugula, 1/2 tsp. more lemon zest and a tiny pinch of crushed red pepper flakes. I like that it’s nutritious and satisfying and delish whether served warm or cold the next day. This is definitely a keeper!
