Description
This tangy, sweet, and salty salad has always been a favorite, and this version, made with rich cashews, sweet golden raisins, and smoky bacon, is especially good. Feel free to adjust the recipe as you wish — try sunflower seeds or walnuts instead of the cashews, add in shredded cheddar cheese, or stir in some crispy chickpeas. The recipe, which makes 6 cups, is a Yummly original created by Ashley Strickland Freeman.

- 2/3 cup mayonnaise
- 2 Tbsp. apple cider vinegar
- 2 Tbsp. granulated sugar
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 lb. broccoli florets
- 1/2 cup golden raisins
- 1/4 cup red onion (finely chopped)
- 1/2 cup roasted salted cashews (coarsely chopped)
- 4 slices bacon

Directions
- Stir together mayonnaise, vinegar, sugar, salt, and pepper in a medium bowl.
- Cut broccoli into bite-size pieces, then add it to bowl along with raisins, red onion, and cashews, stirring to toss and thoroughly coat ingredients. Chill, covered, at least 1 hour before serving.
- Meanwhile, cook bacon in a large frying pan over medium heat, turning occasionally, until browned and crisp, about 6 minutes. Transfer to paper towels, then let cool. Crumble and stir into salad.
- Serve salad, or chill up to 1 day.

This was delicious! I added red bell pepper, cucumber, carrot and used walnuts stead of cashews. Very filling. I used it as the meal and I’m sure it is also used as a side.

i make this often and I've found that even people who don't like broccoli love this! i often substitute the raisins for Craisins and i use peanuts instead of cashews. you can also use sunflower seeds.
