- 1/2 red onion (medium, diced)
- 1/3 cup pumpkin seeds
- 1/3 cup tart cherries (dried unsweetened)
- 1 cup mayonnaise (I use Just Mayo for egg-free or Primal Kitchen)
- 1/2 cup tahini
- 3 Tbsp. raw honey (I use neem or manuka)
- 2 Tbsp. sherry vinegar
- 1 Tbsp. avocado oil
- 3 pinches kosher salt (and crushed black pepper, to taste)
