  • 1 pound broccoli rabe
  • 2 tablespoons extra virgin olive oil
  • salt
  • 1/2 cup creamy peanut butter
  • 1/4 cup reduced sodium tamari soy sauce
  • 3 tablespoons rice vinegar
  • 3 tablespoons water
  • 2 tablespoons honey (or agave nectar)
  • 1 teaspoon fresh ginger (grated)
  • 2 cloves garlic (pressed or minced)
  • 1/4 teaspoon red pepper flakes (plus more for sprinkling)
  • 1 handful chopped fresh cilantro
  • 1 lime wedge (small)
  • 1/2 teaspoon sesame seeds

    This was very good! I didn’t have rice vinegar so I substituted 1 tbsp of apple cider vinegar, which was fine. Mine made too much sauce for 6 oz of noodles, so you can definitely cook more noodles. Also used regular broccoli (also fine).
