- 3/4 cup quinoa (uncooked)
- 1/4 tsp. kosher salt (plus additional for seasoning)
- 1 shallot (small, finely chopped, about 1/3 cup)
- 1/2 cup fresh parsley (coarsely chopped)
- 1/4 cup fresh tarragon (coarsely chopped)
- 1/4 cup sliced almonds (or slivered almonds, toasted)
