- 1 lb. mushrooms (sliced)
- 2 Tbsp. dry sherry
- 2 cups broccoli florets (chopped)
- 2 oz. low-fat swiss cheese (shredded, divided)
- 2 Tbsp. grated Parmesan cheese
- 1 oz. skinless boneless chicken breast halves
- 1/4 tsp. salt
- 1/8 tsp. black pepper

Directions
- Spray nonstick skillet with cooking spray - heat over med. heat.
- Add shallots, mushrooms, and sherry. Cover. Cook about 5 min. or until mushrooms are soft.
- Add broccoli, cover, cook about 7 min. Stir occasionally until broccoli is tender/crisp.
