  • 3 tablespoons butter oil
  • 1 white onion (small, peeled and finely diced)
  • 2/3 cup carrots (diced , about 1 large carrot, peeled)
  • 3 cloves garlic (minced)
  • 1/4 cup flour
  • 3 cups vegetable stock (good-quality)
  • 2 cups milk (I used 2%, but any kind of milk will work)
  • 4 cups broccoli florets ( chopped, about 1 medium head of broccoli)
  • 1 teaspoon Dijon mustard (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces sharp cheddar cheese (freshly-grated* part-skim, plus more for serving)

    Looks just like photo. Easy to make. Tasty and I liked the fact that it simply uses 2% milk and not cream. I added some thyme to the recipe and it was delicious.

    This soup was ok. It was thin and it didn’t have much flavor. Even though I cooked it on a low heat, the milk curdled and the soup didn’t look very appetizing

    I made this and added the white part of 3 small leeks to the mix and used half & half instead of milk It turned out fabulous, hearty & quite tasty

    I just made the soup, tasted good, but came out very thin. I cooked it longer too and added extra cheese. I wanted to blend the broccoli a little but it never got tender enough, I should have let it cook for about 20-30 minutes and it would have worked better for blending.

    I made this soup, but I had a problem keeping the cheese melted and not congealed together. I might have burnt some of the cheese at the bottom of the pot, too. But it was a tasty soup.

    this was delicious! i used vegetable stock and eyeballed the cheese. if you dont like it too salty dont decrease the salt since the cheddar is a but salty.

    Delicious. Instead of flour, I puréed an avocado, also added 2 extra garlic cloves and half as much cheese as it called for. Love it and will definitely make it again.

    It was okay, but nothing spetacular. it lacked... substance and flavor. I think adding in potatoes or something next time would be a good idea. Overall, I like it.

    I made a double batch and it was delicious. The only changes I made to the recipe are that I creamed it using an immersion blender before adding the cheese, and I used pre-grated cheddar cheese instead of grating my own. The cheese melted fine and the soup turned out great,
