Such a quick and easy recipe! To make it more to my taste, I added a spicy cheese blend, 1tsp of chilli powder and 1tsp of vegetable stock. Honestly it's a such a light and delicious meal, I found it lovely to eat during hot days as I didn't feel too full or bloated. Would definitely make this again but perhaps customise it more just to try different variations.

Incredibly easy to make and really delicious and healthy.
Be careful if you've never made quiche before, this rises quite a lot so make sure you leave plenty of wiggle room in your baking dish for the quiche to rise.
