- 1 Tbsp. Diamond Crystal® Kosher Salt (15g)
- 2 tsp. freshly ground black pepper (10g)
- 2 tsp. mustard powder (10g)
- 2 tsp. grated lemon zest (10g freshly, from about 1 large lemon)
- 1 lb. skin-on boneless salmon fillets (450g, you will need only 1/2 pound for the pie, so you'll have plenty left over)
- 1/2 lb. shrimp (225g, medium to large, peeled and deveined)
- 1/8 tsp. baking soda
- kosher salt
- 4 Tbsp. unsalted butter (60g, plus 2 more tablespoons (30g) if using panko, plus more for buttering baking dish)
- 2 leeks (medium, white and light green parts only, washed and finely chopped, 8 ounces; 225g after trimming)
- 1/3 cup all-purpose flour (1 1/2 ounces; 40g)
- 1/2 cup dry white wine (120ml)
- 1 cup whole milk ((240ml)
- 1 cup heavy cream ((240ml)
- 1/4 cup fresh flat-leaf parsley (16g, chopped and tender stems)
- 3 Tbsp. minced chives (10g)
- 2 anchovy fillets (oil-packed, finely chopped)
- freshly ground black pepper
- 1 lb. cod (450g, or other firm, white-fleshed fish fillets, such as halibut, hake, or pollack, skinned, deboned, and cut into 1 1/2–inch chunks)
- 1/2 mashed potatoes (recipe Ultra-Fluffy, made with only 1/2 cup, 120ml milk total)
- 1/2 cup panko bread crumbs (30g, optional)
