Description
Orange flower water and candied fruit flavor this sweet and airy cake which is topped with sugar pearls for a little bit of crunch. The brioche dough is baked in the shape of a crown, making it the perfect festive treat. Add this to the center of your Easter table for a beautiful and edible centerpiece or place it on a cake stand and fill the center with flower or candy.

- 130 mL milk
- 3 Tbsp. orange flower water
- 2 eggs (beaten)
- 80 grams butter (soft, cut into pieces)
- 380 grams flour
- 2 Tbsp. sugar
- 1/4 tsp. salt
- 1/4 tsp. baker's yeast
- 150 grams candied fruit (diced)
- 1 egg yolk
- sugar (grains, sugar used for chouquettes, available in most supermarkets)

Directions
- If you have a bread machine, place the ingredients in the following order: milk, orange blossom water, beaten eggs, butter, flour, sugar, salt and yeast ( taking care not to touch the yeast and salt). Put the dough without cooking program. The beep, add the candied fruit and let the program finish.
- If you make the dough by hand, combine the flour, sugar, salt. Make a well in the center and put in the beaten eggs, milk, orange blossom water, butter and yeast. Stir to as the "dry" ingredients to the liquid center, once a ball is formed, knead the dough for 15 minutes. Add candied fruit and knead a minute or two. Cover the dough with a kitchen towel and let it pause for 1:30 in a warm place away from drafts.
- Place the ball of dough on a baking sheet lined with parchment paper beforehand and make a hole in the middle of the ball to form the crown. Drag a bean in the dough from the bottom (if you do the above, the dough may not inflate well. Cover the crown of cloth and leave to rise for 30 minutes again.
- After 15 minutes, preheat the oven 7 th.
- At the end of the pause, gild the crown with egg yolk diluted with a tablespoon of water coffee. Sprinkle with sugar beans and bake for 30 minutes.
