- 2 leeks (white and light green portions, halved, thinly sliced, ~1 1/2 cups, and rinsed well)
- 1 clove garlic (minced)
- 3 sprigs fresh thyme
- 1 cup chicken broth
- 1/4 cup port wine
- 2 Tbsp. balsamic vinegar
- 1/2 pt. blackberries (fresh, or 1/3 cup blackberry preserves)
- 2 cups couscous (prepared, or cooked rice, for serving)
