- cream cheese (16 oz, 1 lb., softened to warm room temperature)
- 10 oz. brie (; rind completely cut off, and cheese softened to warm room temperature)
- 1 cup granulated sugar
- 1 vanilla bean (I used a Madagascar bean.)
- 3 large eggs (room temperature, not at all cool)
- 3/4 cup heavy cream (not ice cold)
- 1 pt. strawberries (ripe, ; hulled, cleaned, and quartered)
- 1 pt. strawberries (ripe, ; hulled, cleaned, and halved)
- 6 Tbsp. granulated sugar
- 1/2 tsp. fresh lemon juice
