- 1 lb. fresh mushrooms (or more washed and cut into half slices)
- 2 Tbsp. olive oil (depending on your pan)
- 6 oz. goat cheese (log type such as Chevre cut into very thin slices, keep refrigerated until you are ready to use or it won't slice well)
- 12 eggs
- 2 Tbsp. milk (half and half, or cream)
- 1 tsp. Spike Seasoning (optional, but recommended)

Turned out great! I also sautéed the mushrooms in garlic and beat 2 cups of shredded Gruyere cheese into the eggs. It was amazing!

Really loved this! I added sautéed onion and garlic and next time I might add some cherry tomatoes.

I modified this a bit adding bacon and using whatever cheese I had in the fridge. Turned out amazing, Was a hit at work.
