- 9 flour (Mission Fajita Size Tortillas, 6 inch)
- 2 cups mexican blend cheese (shredded, divided)
- 6 eggs (beaten)
- 1/2 cup milk
- 1/4 cup red bell pepper (finely chopped)
- 1/4 cup chopped cilantro (finely)
- 1/8 tsp. salt
- 1/8 tsp. pepper

Directions
- Carefully remove from muffin cups. Serve hot with salsa.
- Cook sausages according to package directions; cut into 1/4-inch slices; set aside.
- On a piece of waxed paper, spray each tortilla on both sides with vegetable cooking spray.

It was easy to make. I mixed up the recipe a bit using what I had on hand. Instead of sausage I used a Soy-rizo or Soy Mexican sausage substitute with garlic, onions, and diced potatoes sautated in olive oil added the cheese to the bottom then filled with the meat substitute filling, poured in the diced pepper, cilantro egg mixture. Toped with cheese and the meatless filling that gave a beautiful look as it browned during the baking. It was light and delicious. The only thing I would change is to work on the spices for more flavor, a little heat would be nice.
