- 1 Tbsp. oil
- 1/2 onion (medium, diced)
- 1/2 potato (large, cubed into ¼ inch, 1/2 cm pieces)
- 6 strips thick cut bacon (streaky, cut into ¼ inch, 1/2 cm pieces)
- 6 large eggs (beaten)
- 1 1/2 cups grated Monterey Jack cheese
- 4 Tbsp. salsa (your favorite)
- 50 pastry (small spring rolls, sheets, 5 inch x 5 inch, 125mm x 125mm, I used this brand)
- 1 Tbsp. cornstarch (cornflour mixed with ¼ cup of water, for sealing the spring rolls)
- oil (for frying, I used sunflower oil, but you can use any high-heat oil)
- sour cream
- guacamole
