- 1 lb. yellow potatoes (washed, chopped into ½-1 inch cubes, 2 medium potatoes)
- 1 whole yellow onion (peeled and chopped)
- 1 1/2 tsp. salt
- 1 tsp. ground black pepper
- 3 Tbsp. olive oil
- sausage links (12 pre-cooked, if frozen defrost them by placing them in fridge the night before, or else defrost in the microwave.)

- 4 oz. sharp cheddar cheese (shredded)
- 2 Tbsp. grated Parmesan cheese
- 1/4 cup chopped parsley
