I made this recipe because I had a failed banana bread; I decided to experiment a little and used half mashed bananas and half crushed fresh pineapple. The result tasted good but had no structural integrity! Not wanting to waste it, I thought a bread pudding would work and tried this recipe - wow, am I glad I did! I made the following modifications based on the ingredients I had: I subbed 1.5 cups milk and 1.5 cups half and half since I didn't have heavy cream, and half a vanilla bean for the extract. I am making again today for Thanksgiving! Delicious!
