- 1 red bell pepper (seeded, stemmed, and diced)

I simplified by cooking the sweet potatoes in the pot instead of roasting them and using canned black beans. I found a similar recipe on Allrecipes that uses mangoes so I also added half a bag of frozen mango chunks. Chopping the sweet potatoes was very tedious but my family liked the flavors!
