Bratwurst with Cabbage and Pancetta

  • 1 tablespoon olive oil
  • 8 bratwurst
  • 5 ounces pancetta (cut into small strips)
  • 1/4 head green cabbage (sliced into thin wedges)
  • 3/4 cup chicken stock
  • 1/4 teaspoon caraway seeds
  • 1 tablespoon wholegrain mustard

    Directions

    1. Heat oil in a large frying pan over medium-high heat. Cook bratwurst, turning, for 10 mins, or until browned and cooked through.
    2. Meanwhile, heat a large saucepan and cook pancetta, stirring, until browned lightly and crisp. Add cabbage and cook, stirring, until tender. Add stock and simmer, covered, for 3 mins or until cabbage wilts. Stir in caraway seeds and mustard and season to taste.
    3. Serve sausages with cabbage mixture.
