- 1 cup chicken broth (homemade, warmed)
- 2 bay leaves
- 1 cup red wine
- 1 Tbsp. fresh leav thyme
- 2 cups chanterelle (coarsely chopped, loosely packed)
- 1/8 tsp. curry powder (or "white curry" blend, see below)
- 1/4 cup Madeira
- 2 Tbsp. heavy cream (or more, to taste, optional)
- 1 handful fresh parsley leaves (coarsely chopped)
