Description
This takes a bit of forward preparation, but well worth the effort.
Ingredients

- 1 leg of lamb
- 1 tsp. salt
- 1 tsp. ground cumin
- 2 tsp. ground coriander
- 1 tsp. ground ginger
- 1/2 tsp. ground black pepper
- 1 tsp. paprika
- 2 Tbsp. cooking oil
- 28 grams butter
- 1 carrot (large)
- 1 onion (large, sliced)
- 2 sticks celery (sliced)
- 250 stock (mils)
- 1 tsp. tomato puree
- bouquet garni

Directions
- Mix spices together, rub into lamb leg and leave overnight or at least 1-2 hours
- Braise in oil slowly. Don't over colour or spices will burn
- Take out lamb, add vegetables, cover and sweat for 5-6 minutes
