- 3 heads garlic (cut in half)
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- 1 star anise
- 1 cinnamon stick
- 6 beef short ribs
- coarse salt
- 1 cup all purpose flour
- canola oil
- 1,500 mL table wine
- 2 Tbsp. cocoa powder
- 1 cup brown sugar
- 2 Tbsp. butter (a nub)
- 1 handful peppercorns
- mashed potatoes (Garlic, recipe follows)

- 6 Yukon Gold potatoes (large, scrubbed but not peeled, and quartered.)

- 1 cup cream

- 2 cups olive oil (good, enough to just cover tomatoes in pan)
- kosher salt (or Pinch coarse)
- 2 sprigs fresh herbs
- 1/2 head garlic (sliced in half)
- 4 cherry tomatoes (vine stems of)
- green beans
- 5 handfuls green beans (small, petit haricots verts)
- water
- salt
- 1 shallot (large)
- 2 Tbsp. butter
- freshly ground black pepper
