- 2 lb. pork leg (diced)
- 1 onions (julienned)
- 3 carrots (sliced)
- 6 cloves garlic
- 1 bunch thyme
- 5 bay leaves
- 1 gal. pork stock
- 1 gal. water
- 2 potatoes (large dice)
- 2 cups picholine olives

Directions
- 1. Brown pork
- 2. Add onions, carrots, and garlic and sauté until browned
- 3. Add thyme, bay leaves and liquids, bring to a boil and braise for 90 minutes
- 4. Add potatoes and olives, let simmer another 30 minutes
- 5. Serve hot
