- 1 onion (medium or ½ large, roughly chopped)
- 1 carrot (roughly chopped)
- 1 stalk celery (roughly chopped)
- 2 inches fresh ginger (piece of, cut in 2 or 3 chunks)
- 1/2 tsp. fennel seeds (lightly crushed)
- 1 tsp. red pepper flakes
- 2 Tbsp. tomato paste
- 1 cup red wine
- 3 cups chicken broth (homemade or low-sodium)
- 1/4 cup golden raisins
- 1/4 cup flat leaf parsley (chopped)
- 1/4 cup mint leaves (thinly sliced)
- 1 Tbsp. shallot (minced)
- 1 Tbsp. Meyer lemon peel (minced, or a combination of orange and lemon)
