- 1.6 kilograms lamb shanks (average 4)
- 2 onions (roughly sliced/chopped)
- 2 Tbsp. dry rub (Smell & Taste Paprika)
- 1 Tbsp. vegetable oil (for searing, you can also sear without oil, please note below on oil)

- 2 Tbsp. vegetable oil (to cook the onions)
- 2 Tbsp. garlic (and ginger mix or 5 fresh garlic cloves)
- 2 carrots (chopped/sliced)
- 3 celery stalks (chopped, including the leaves)
- 1 liter beef stock (or water, added gradually)
- 2 Tbsp. ketchup
- 2 Tbsp. Worcestershire sauce
- 400 grams canned chopped tomatoes (1 can)
- 1 jam (Tbps orange Marmalade)
- 1/4 cup dried currants (or raisins)
- 1 1/2 cups red wine
