- 1/4 cup grapeseed oil
- 3 lb. onions (medium, sliced, about 8)
- 1 tsp. black peppercorns
- 3 bay leaves
- 10 garlic cloves (peeled)
- 1 cup tomato puree
- 2 cups beef stock
- 1 cup red wine vinegar (aged, Andrew likes to use Banyuls vinegar from France)
- 3 fennel bulbs (each cut through the core into 1 ½-inch wedges)
