- 1 1/2 cups leeks ([remove outer layer of leek; but stalk into 2 inch sections; cut each section ⅛ strips - so cut each section in half and then take a half and cut ¼ inch strips out of it])
- 4 bunches baby bok choy (; clean and then cut off bottom, allow stalks to be separated.)
- 2 cups spinach (packed)
- 2 Tbsp. olive oil
- 2 tsp. chopped garlic
- 6 Tbsp. soy sauce
- 2 tsp. sesame oil
- 1/2 tsp. red pepper flakes (additional for garnish, optional)
- 1/2 tsp. lemon zest (fresh)
- 2 Tbsp. water
- 3 cups jasmine rice (cooked)
- 2 eggs (poached)
