- 1 1/2 lb. beef sirloin (680 g, or round rump)
- 2 oz. bacon fat (55 g)
- 1 cup beef stock (235 ml, or vegetable)
- salt
- pepper
- 1 Tbsp. vinegar
- 1 large carrot (diced)
- 7 oz. celeriac (200 g, root, 1 medium root, diced)
- 1 parsley root (medium, diced)
- 1 onion (large, chopped)
- 3.5 oz. butter (100 g, melted)
- 10 black peppercorns
- 4 allspice berries
- 2 bay leafs
- 1 lemon (juice from, or 1 tbsp vinegar)
- 1 cup heavy cream (235 ml, plus some milk)
- all purpose flour (if needed)
- sugar (if needed)
- 2 pinches salt
- 1/2 tsp. mace (ground, and a bit of turmeric if you want to have a tasty-looking yellow tint to the dumplings; the flavor is good too)
- 2 cups flour (coarse, 475 ml)
- 2 cups flour (semi-coarse, polohruba mouka)
- 1 cup milk (lukewarm, 235 ml, more if the dough is dry)
- 2 tsp. sugar
- 3 rolls buns (2-, the traditional sized ones, they’re about 70g each)
- 1 egg
- 1 cube fresh yeast (or the dried yeast equivalent)
