- 55 grams butter (chilled, cut into small pieces)
- 150 grams cheddar (finely grated)
- 1 Tbsp. fresh thyme leaves (chopped)
- 1 Tbsp. curly leaf parsley (chopped fresh)
- 60 mL milk (and 60ml water, warmed, plus extra milk for brushing)
- 1 Tbsp. wholegrain mustard
