- 1/2 cup salt
- 750 mL bourbon (good-quality, if you wouldn’t drink it, don’t cook with it)
- 1 1/2 cups brown sugar
- 2 cups mirepoix (roughly-chopped, Carrots, Celery, and Onions)
- 12 garlic cloves (smashed and peeled)
- 6 bay leaves
- 1 bunch fresh thyme
- 1 bunch fresh sage
- 1 Tbsp. whole black peppercorns
- 1/4 cup juniper berries
- 3 cinnamon sticks (optional because I don’t like cinnamon)
- 1 whole turkey (fresh)

This was THE BEST Turkey I have ever had!!!! My family LOVED it! The Turkey was beautifully plump when I took it out of its bath. I saved some of the brine after putting the Turkey in the oven, and brought it to a rolling boil so I could use it to baste and inject the Turkey every 30 minutes. The FLAVOR was AMAZING...the breasts were JUICY...the kids loved it and my husband loved it (and he hates Turkey). This recipe is going into the family cookbook and will be our go-to Turkey recipe from now on! ...and I used the drippings to make the gravy.....❤️❤️❤️❤️❤️ So good!!!
