- 1/2 yellow onion (small, roughly chopped)
- 1 sprig fresh rosemary
- 3 sprigs fresh thyme
- 1 Tbsp. extra-virgin olive oil (or leaf lard)
- 2 tsp. sea salt (or kosher, divided, or more to taste)
- 1 cup grits (stoneground white or yellow)
- 2 Tbsp. unsalted butter
- 4 cups baby arugula (dandelion leaves or other small spring greens, washed)
- extra virgin olive oil (Your best, for drizzling)
- 2 cups cherry tomatoes (about 24)
- 1 1/2 Tbsp. extra virgin olive oil (divided)
- 2 Tbsp. shallot (or sweet onion, diced)
- 1/2 cup honey (I used a local wildflower honey)
- 8 Tbsp. red wine vinegar (good quality)
