- 2 1/4 lb. roast (boneless pork, rib roast, my preferred or loin roast – ideally with some fat on the top.)
- 1/2 cup chicken broth
- 2 Tbsp. olive oil
- 1 tsp. Dijon mustard
- 1 tsp. dried thyme
- 1/2 tsp. dried rosemary
- 1/2 tsp. garlic powder
- 1 tsp. kosher salt
- 1/2 tsp. ground pepper
- 1 1/2 lb. potatoes (cut in 1/2 inch wedges, about 3 potatoes)
- 1 medium carrot (sliced, 1/2 inch thick)
- 1/2 medium onion (sliced, 1/2 inch thick)
- 3 garlic cloves (sliced in half)
- gravy (for Roast Pork)
- 2 Tbsp. oil (or fat drippings, Note 2)
- 2 1/2 Tbsp. all-purpose flour
- 1/2 tsp. dried thyme (or 1 tbsp fresh)
- 1 1/2 cups chicken broth (or beef broth if using undiluted full strength broth, recommended, use 1 cup broth and 1/2 cup water)
