- 1/2 cup chopped cilantro
- 1 tsp. masala (chaat or sandwich, such as Spicewalla Chaat Masala or MDH Chunky Chat Masala)
- 8 slices sandwich bread (Pullman or other soft)
- 1 small red onion (finely chopped)
- 1/2 cup chopped green bell pepper (finely, or seeded plum tomatoes)
- 8 oz. Monterey Jack
- 8 slices white American cheese
- ghee (Room-temperature, or unsalted butter, for sandwiches)
